Five layers of light sponge are filled with velvety pistachio St. Honoré cream and raspberry cream, coated in pistachio Swiss meringue buttercream and finished by hand with piped pistachio and vanilla swirls, nibbed pistachios and freeze-dried raspberries. The Happy Diwali plaque sits in the centre, and the two gold ice fountain candles add a burst of golden sparks when it's time to cut the cake.
