Four layers of plain sponge are filled with mango and passionfruit cream, mango pieces and real passionfruit puree, then hand-coated in marbled Swiss meringue buttercream and finished with mango-coloured and white buttercream kisses, passionfruit puree and mother-of-pearl sprinkles. The Happy Diwali plaque sits on top, and the two gold ice fountain candles light up the table when you bring it out.
